Reduza o lume e cozinhe por 10m. mexendo de vez em quando. corta-se aos bocados e reserve.&lt;br /&gt;Descascam-se as batatas, lavam-se e cortam-se às rodelas de 1 cm de espessura.&lt;br /&gt;Limpam-se os tomates de peles e sementes e cortam-se aos Cortar os pedaços dos limões espremidos, casca e bagaço em pequenos pedaços, sem os caroços.Cortar as mangas também em pequenos pedaços. Colocar dentro do suco dos limões com o sal e jindungo.Deixar maturar por pelo menos 30 dias antes de usar.&lt;br /&gt;Achard de Manga&lt;br /&gt;&lt;br /&gt;Os mesmos ingredientes e preparo, só não junta os pedaços de Limão&lt;br /&gt;Achard de Limão&lt;br /&gt;&lt;br /&gt;O mesmo mas sem mangas&lt;br /&gt;&lt;br /&gt;Mango Chutney&lt;br /&gt;&lt;br /&gt;Ingredientes : Fatias de polpa de manga madura, açúcar, sal, jindungo, molho inglês.&lt;br /&gt;&lt;br /&gt;Preparo : Cozinhar os pedaços de manga numa calda de açúcar com pouca água.Retirar e escorrer. Corte a cebola e tomate e misture ao peixe. Guarde num recipiente, adicionando leite de coco e azeite de dendem. Deixe repousar alguns minutos e depois coloque a cozinhar, até o peixe estar pronto. Cozinhe por mais quatro minutos, junte o creme de arroz e mexa delicadamente.&lt;br /&gt;&lt;br /&gt;Sirva depois de 30 minutos. Filtra-se por um passador. Ferve-se a água adicionando gindungo. Junte o tomate picadinho, limpo de pele e sementes. Corte a couve portuguesa em tiras finas, tipo caldo verde, escalde em água fervente e adicione ao refogado. Junte a beringela em pedacinhos e o quiabo em rodelas. Aromatize com óssame, pau-pimenta e folha mosquito. Tempere com sal, pimenta e gindungo. Por fim, acrescente o lombo de cherne em pedaços, deixe cozer e apurar.&lt;br /&gt;&lt;br /&gt;Experimente servir o calulu com um angu de banana: Descasque a banana, corte em pedaços e leve a cozer em água. Retire, escorra, reduza a puré e coloque num pano limpo dando a forma de um rolo. Deixe arrefecer e sirva.&lt;br /&gt;&lt;br /&gt;NOTA: veja se os convidados gostaram. Descasque os alhos, esmague-os e misture com sal. Esfregue esta mistura na galinha e espere. Descasque a cebola e pique. Core a galinha no azeite, junte a cebola picada e refresque com um pouco de vinho branco ( a galinha, não você!). Vá adicionando água aos poucos e deixe cozer a galinha. Adicione um pouco de beringela e de curgete em pedaços. Acrescente ainda os quiabos e o dendem.&lt;br /&gt;&lt;br /&gt;GUISADO DE LEGUMES&lt;br /&gt;&lt;br /&gt;Corte a restante curgete e a beringela em pedaços e confeccione-os num pouco de caldo de cozedura da galinha. Esmague uma malagueta com o sumo de ½ limão e junte ao preparado anterior. Deixe terminar a cozedura e tempere com sal e pimenta.&lt;br /&gt;&lt;br /&gt;FUNJE&lt;br /&gt;&lt;br /&gt;Leve uma panela com água ao lume e, quando levantar fervura, junte a fuba, mexendo energicamente para não ganhar grumos. Deixa-se ferver. Misturam-se a batata doce aos bocados e o gindungo pisado.&lt;br /&gt;Uns minutos depois junta-se o peixe fresco cortado ás postas e o peixe seco.&lt;br /&gt;Depois de cozido serve-se numa terrina. Quando estiver meio cozido, deita-se um pouco de sal e põe-se uma meia chávena de óleo de palma, deixando então cozer completamente. Depois deita-se o resto do óleo, mexe-se e esmaga-se um pouco do feijão para engrossar. Deixa-se cozer o resto do óleo em lume brando. É conveniente, mexer de vez em quando,.&lt;br /&gt;Serve-se com farinha de mandioca torrada, que se espalha por cima. Também pode acompanhar com banana ou mandioca cozida. Numa travessa, serve-se peixe assado (mufete), como carapau ou outro peixe miúdo. .
